Boursin Button Mushrooms

Four ingredient fix.
I can guarantee that if you are a) a steadfast mushroom fan OR b) the complete and resolute opposite… you will love this recipe. Its four steps (clean, stuff, drizzle, roast) and the total cooking time (10 measly minutes) will have you serving these babies up faster than you can say YUM.

Boursin Button Mushrooms

Prep Time: 5 mins | Cook Time: 10 mins | Makes roughly 20 mushrooms

  • 1 package of button mushrooms (this should yield about 20 small mushrooms)
  • 1 package of Boursin cheese (not the light, the Garlic and Herbs version)
  • Shredded Parmesan cheese (enough to sprinkle on each mushroom, about 3 tbs)
  • Balsamic vinegar (enough to drizzle on each mushroom, about 2 tbs
The Steps
  1. Preheat oven: Set your oven to 400 degrees. Take the mushrooms out and with a damp paper dab off any dirt you see. Turn the mushroom upside down and snap off the stem (with a little twist they should come off like a charm). This will create a little mushroom bowl.

  2. Stuff the mushroom caps: Line a sheet pan with some tin foil, and place the clean mushrooms on the sheet. Open up the Boursin cheese, and using either a teaspoon measurer or a good ole silver spoon, scoop out the cheese and fill each mushroom to the brim. Follow with the rest of the mushrooms, and then drizzle the balsamic over top. Sprinkle on the Parmesan.

  3. Bake: Place the mushrooms in the oven for 10 minutes. The tops should be golden and bubbly. Make sure you don’t leave this plate for long, they will all disappear!

    I've done something similar, but cook some pork sausage, melt in the boursin...then stuff!
