Sautéed Asparagus

So easy it'll have you saying asparawhat!
I love asparagus, and because of this the people I cook for get to (or have to) eat a ton of it. I'm always looking for new ways to cook up the nutrient packed veggie so no one gets too worn out on the same thing (or says it out loud, at least!). Here is a super fast (we're talking about 6 minutes here), easy, and delicious recipe that will work its way into your heart just as it has in mine. Enjoy!

Sautéed Asparagus

Prep Time: 5 mins | Cook Time: 10 mins | Serves 2+

  • 1 bunch of large asparagus, diced at an angle (see picture below)
  • 1 large shallot, minced
  • 2 garlic cloves, minced
  • 2 tbs. olive oil
  • red pepper flakes to taste
  • salt & pepper
  • Parmesan shavings (optional)
The Steps

Prep asparagus: Remove tough ends of asparagus by cutting bottom 4-5 inches off. Slice up entire bundle of asparagus at an angle by turning the spear to about 10 o'clock with one hand. Take your knife and cut at 12 o'clock to cut at a diagonal.

Saute veggies: In a skillet over medium, heat the olive oil. Add in the shallot and let cook for about 3-4 minutes, stirring occasionally, then add the garlic & red pepper flakes and cook for about 1 minute longer. Now you can place in the asparagus.

Cook the asparagus in the pan for about 5-8 minutes, depending on how crunchy/soft you like your veggies. Be sure to salt & pepper those spears! You should test a couple thicker cuts to make sure the spears are finished cooking.

Top with cheese: Once the asparagus is finished, remove from heat and serve with Parmesan shavings. Enjoy!
