Grilled Corn Guacamole

Why you wanna be my love?
The problem: You often find yourself staring in the mirror asking "Why, God, why is my guacamole so ordinary?? Can you please strike me with a glimmer of inspiration so I can have a full-blown fiesta of fantasticalness?!" The answer: Grilled corn guacamole. This stuff will blow that sombrero right off your head, folks. Do your tortilla chips a favor!

Grilled Corn Guacamole

Prep Time: 2 mins | Cook Time: 10 mins | Makes about 2 cups dip

  • 2 ears of corn, white or yellow, shucked
  • 3 Hass avocados
  • 1/2 white onion, diced
  • Juice of 2 limes
  • 1/2 bunch of cilantro, chopped
  • 2 tbs. jalapeƱos, minced (1 giant pepper or 2 smaller)
  • 1 tsp. cumin
  • salt + pepper
The Steps
  1. Prep grill and corn: Fire up your grill or grill pan. You want it on medium to med-high heat. Clean your corn and make sure and get all the silk off and drizzle with a little olive oil. Season them well with salt and pepper.

  2. Grill corn: Toss those babies on the grill until they have some nice grill marks all around- about 2-3 mins each side or until they start to char.

  3. Make guacamole: Halve the avocados and toss out the pits. If you slice the avocados up in their casings, it will help along the with the mashing process. Toss all your avos in a good sized bowl. Add in the diced onions, chopped cilantro, jalapeƱos, cumin, and lime juice into the bowl. Mash it all up with a fork.

  4. Add in grilled corn: Make sure the corn is cooled before you slice off the kernels add to guac. Mix to combine and taste before serving!
