Birthday Lemon Roast Chicken

Party like it's your birthday.
This past weekend was my boyfriend Ty's 25th birthday, which was a perfect reason to cook up a classy meal to celebrate the big day. Funny thing is, this dish will only seem like you spent your afternoon preparing it. Fool everyone with these lemon, garlic, and herb roasted chicken breasts that are delicious enough to serve on a special occasion, and easy enough to whip up on a Monday after a big weekend. Adapted from (one of my absolute faves) Ina Garten's Lemon Chicken. Enjoy!

Birthday Lemon Roast Chicken

Prep Time: >5 mins | Cook Time: 40 mins | Serves 2

  • 2 bone-in, skin-on chicken breasts (very important!)
  • 3 garlic cloves, minced
  • 2 lemons, 1 juiced and 1 sliced
  • 5 sprigs of thyme, chopped
  • 1/2 cup chicken broth
  • 2 tbs. olive oil
  • Lots of salt and pepper
The Steps
  1. Prep your baking dish: Preheat your oven to 400 degrees. Spray a glass, oven-safe dish with some cooking spray and set aside.

  2. Season chicken: Take your chicken breasts and sprinkle a hefty amount of salt and pepper on each. Set in the glass dish.

  3. Make sauce: In a small skillet over medium heat, place the olive oil, lemon juice (watch out for the seeds, they're sneaky), lemon slices, garlic, thyme, and some salt and pepper. Whisk a little to mix it all up. Bring the mixture to a boil, and then reduce the heat. Pour the entire mixture over the chicken breasts in the glass dish. 

  4. Bake chicken: Place the chicken breasts in the oven for exactly 40 minutes. Remove them and let them sit for at least 5 minutes before cutting. Serve with juices poured on top! 
*Tip: To knock this one out of the park, serve it over couscous or rice pilaf so it can soak up all the lemon/garlic awesomeness.

    I actually make lemon chicken on our (overworked) BBQ :) but I like this too!!
