Avocado Pesto Pasta

Avocados are lifeeeeeee.
This pasta makes me smile. But that's a little unfair... all pasta makes me smile. Duh. But this particular pasta takes individually awesome things and combines them into a masterpiece: avocados, arugula, basil, jalapeños, and limes. Oh and bowties- the cutest male accessory thus making it the cutest pasta type. The creamy texture of the avocado replaces the olive oil completely in this pesto, and trust me, it won't be missed. Enjoy!

Avocado Pesto Pasta

Prep Time: 10 mins | Cook Time: 10 mins | Serves 4+

Ingredients
  • 2 avocados, peeled and seed removed
  • 4 cups arugula
  • 1 cup basil leaves
  • 1 jalapeño, halved (keep seeds in one half, seed the other half)
  • juice from 1 large lime
  • 3 garlic cloves, minced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. bowtie pasta
  • 1 cup parmesan
The Steps
  1. Boil water: Place a pot of water on the stove and bring to a boil. Salt the water with 1/4 cup of salt once it has reached a full boil.

  2. Make pesto: If you have a full-sized food processor, you can make the sauce in one big batch. Otherwise, if you have the mini version, split your ingredients in half and combine in two batches. Combine the avocado, arugula, basil leaves, jalapeño, lime juice, garlic, salt and pepper in a food processor and pulse until it has reached a creamy consistency. Taste your pesto and season accordingly. Place finished pesto into a large bowl to later be mixed with the pasta.

  3. Cook pasta: Place your bowtie pasta into the boiling water. Cook according to package.

  4. Toss pasta with pesto: Drain pasta when finished and immediately combine with the pre-made pesto. Toss with the parmesan and serve immediately or cool completely for more of a pasta salad.
