Want to cook dinner in 10 minutes? 
Couscous is kind of the bomb. It's quicker than pasta, tastier than plain rice, and easier than you can possibly imagine. Start with the boxed version in your pasta/rice aisle, and sass it up with chicken broth and some toss ins and you will have yourself a meal (or legit side) in a matter of minutes. No I'm not exaggerating. Try it and be pleased. 

Couscous Salad with Feta, Asparagus + Sundried Tomatoes

Prep Time: 5 mins | Cook Time: 15 mins | Serves 4+ (as a side)

  • 1 box couscous, I like the Near East Wheat version but you can pick whichever looks tastiest
  • 1 1/4 c. chicken broth
  • 1 tbs. olive oil
  • 1 onion, diced
  • 1 lb. asparagus, ends removed and chopped
  • 1/4 cup sun-dried tomatoes, drained of oil on a paper towel
  • 1/2 cup (or more) feta crumbles
The Steps
  1. Saute onion & asparagus: Heat the oil in a deep sauté pan and add onion and asparagus. Cook until softened, about 10 minutes. Add in chicken broth and bring to boil; add season packet from boxed couscous and asparagus.

  2. Add couscous: Once chicken broth is boiling, add in couscous. Cover, remove from heat. Let stand about 5 minutes without removing top. 

  3. Fluff to finish: Fluff with fork after about 5 minutes. Add in sun-dried tomatoes and feta crumbles. Enjoy!
