Buffalo Chicken Sliders

buffalo chicken sliders weeknight quick dinner

No cooking required. :P
Buffalo sauce has flava, buffalo sauce has tang, just looking at a bottle of that sauce gives me hunger pangs! Now that we have that out of the way, I present to you these mini buffalo sliders. After a long day, a nonfunctioning oven, and several withdraw-like cravings to use the half bottle of Frank's buffalo sauce saying "yo, woman" in the fridge, they couldn't have been easier. I TOTALLY CHEATED and grabbed a rotisserie chicken from the store... there was basically no cooking, no prep time, no sweat off your back to get these pretty little puppies on the table. Enjoy!

Buffalo Chicken Sliders

Prep Time: 5 mins | Cook Time: 0 mins | Makes 6 sliders

  • 1 large chicken breast, roasted and shredded (or 1 breast from a rotisserie chicken shredded)
  • 1/2 bottle (6 oz.) Frank's Buffalo Sauce
  • 1 bunch of green onions, chopped
  • 1 jalapeño, sliced (seeds can be removed)
  • couple of tablespoons of gorgonzola, for topping
  • 6 mini wheat slider buns
The Steps
  1. Coat chicken: Combine shredded chicken and buffalo sauce in a mixing bowl, toss until chicken is completely covered, and set aside.

  2. Toast buns: Lightly butter insides of all buns. In a grill pan/grill top/toaster, toast until desired.

  3. Assemble sliders: Place a couple scoops of the marinated chicken a mini bun. Top with gorgonzola. Add green onions, and 2 slices of jalapeño. Repeat with the rest of the sliders.

  4. Enjoy: Serve warm! You can zap them in the microwave for 30 seconds if necessary.

An amazing meal everyone in the family can enjoy! Great recommendation on using a rotisserie chicken to save time (every mother in America can appreciate that)! This is one of the tastiest & easiest meals!!
