Crispy, Crunchy Caprese

I have a confession.

You know how some items on a menu always jump out and say "oh, hey gurl hay! I'm right here!" to you, no matter where you're at or what you thought you were craving? Caprese and I have that kind of relationship. He/she (can't decide on that one) always tells me to reconsider my app/salad choice for the tempting tomato & cheese combo. And you know what? It always knows best. I just can't resist the call of the tomatoes... the Balsamic.... and of course, the glorious mozzarella. This crispy version will make you say "Hay!" too with its bright and flavorful cherry tomatoes and the oozing, melted cheese. Enjoy! 

Crispy, Crunchy Caprese

Prep Time: 10 mins | Cook Time: < 5 mins | Serves 4

Ingredients 
  • 1/2 pint red cherry tomatoes
  • 1/2 pint yellow cherry tomatoes
  • 2 tbs. Balsamic vinegar
  • prepared pesto 
  • 1 5-oz. ball mozzarella, in air-tight package without water
  • 2 eggs, beaten
  • 1 cup Italian breadcrumbs/panko
  • 1 tsp. red pepper flakes
  • Canola or vegetable oil
The Steps
  1. Prep tomatoes: Slice cherry tomatoes in half and place in bowl with 2 tbs. balsamic vinegar, salt & pepper. Toss to coat.

  2. Coat Mozzarella: Slice mozzarella into four 1/4" slices. In a bowl, place beaten eggs. In another bowl, mix bread crumbs and red pepper flakes. Take each slice of mozzarella and dip into eggs; shake off excess. Dip into breadcrumbs and cover. Take same slice and dip again into eggs, and then into breadcrumbs. Set aside on plate & repeat with all slices.

  3. Fry Mozzarella: In a deep sauté pan, heat about 1/4 cup of oil over medium high heat (oil should not splatter). Oil is ready when a pinch of breadcrumbs sizzles in pan. Place mozzarella slices in oil one at a time and cook for about 30 seconds-1 minute on each side. Using a slotted spoon, delicately flip over the mozzarella (be sure not to splash oil). Note: Second side might cook faster than the first, so keep an eye out. Place golden mozzarella slices on a layer of paper towels to dry.

  4. Finish with toppings: To arrange salad, place 1 slice of mozzarella down on plate and top with about 1/4 cup of chopped tomatoes. Drizzle prepared pesto over top and enjoy!
