Let's have a little heart-to-heart about one of the more important conclusions I've made in my adult years: Toasted sandwich trumps cold sandwich, but panini trumps toasted sandwich again and again. Now you could beg to differ, but I'd be hard PRESSED (pun #1) to hear how melted cheese and crispy crunchy bread smooshed together could be topped. If you don't have a panini grill, don't worry- this isn't a personal attack on your toaster oven. Him and I used to be besties, until I met his HOTTER (pun #2) older brother, the panini grill. You can truly combine anything and make it appealing- for realz, I put dark chocolate and mozzarella in a panini once and it was glorious. This particular recipe, however, takes a spin on an oldie but goodie (ham and cheese) and ups its cool factor with proscuitto and brie. The apples and honey add a sweet touch to a salty, gooey, irresistible sammy.

Prosciutto, Apple + Brie Paninis

Prep Time: 5 mins | Cook Time: 5 mins | Makes 2 Paninis

  • 1 loaf ciabatta or french bread, cut into 4 slices
  • 4 slices Prosciutto 
  • 4 slices of Brie
  • 4 slices of apple (I use Granny Smith's or Honeycrisps)
  • 2 tbs. chopped walnuts
  • 2 tsp. honey
  • salt and pepper
  • cooking spray
The Steps
  1. Warm panini grill: If using the stovetop, place skillet over medium heat.

  2. Assemble paninis: Create your panini as follows: bread, Brie (use knife to spread on bread if it's an extra creamy variety), Prosciutto, honey, walnuts, apples, bread.

  3. Spray grill/pan: Take cooking spray and coat panini grill. If using skillet, spray both outers sides of bread.

  4. Grill paninis: Place sandwiches on grill and close. Cook for 5 or so minutes, or until the cheese has melted and the bread is crispy. On stovetop: Place sandwiches on grill and press down on top of the bread using a large spatula. After a couple minutes, check to see if they're ready to flip. Repeat on opposite side.
