Cheesy Zucchini Rice

Today's a great day. It's Thursday, but it's kind of only like Wednesday.
After this Monday being a freebee and only being at work 3 days (for most of us... I'm sorry if you had to?), our bodies might be confused, at the end of the day... it will soon be Friday. Everyone's second most fave day of the week (I took the liberty of assigning Saturday as the most loved day-- if you have another, shoot me your info: we need to talk). So as I was saying, today is a good day. Speaking of good, I made this rice last week with the Balsamic Honey Steak and let me tell you, it was totally awesome. It's rice, but you add zucchini so it's totally like, healthy? If you're reading this in Taylor Swift's voice, I apologize... I can't get that song out of my head LIKE, EVER. Dang radio and their catchy songs. If you're not a fan of zucchini, swap it out for some broccoli or even chopped up mushrooms. Enjoy!

Cheesy Zucchini Rice

Prep Time: 10 mins | Cook Time: 20 mins | Serves 4+

recipe adapted from Buns In My Oven

  • 1 tbs. olive oil
  • 1 cup jasmine rice
  • 1 1/2 cups chicken broth
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1 medium zucchini, grated with a cheese grater
  • 1 cup sharp cheddar cheese
  • salt and pepper
The Steps
  1. Saute onion + garlic: Heat olive oil over medium and add in diced onion. Cook for about 6-8 minutes until translucent/starting to brown, then add the garlic. Cook for 30 seconds.

  2. Add rice: Pour in the rice and let cook for 2 minutes before adding in the chicken broth. Bring to a boil, and then turn the heat to simmer (but keep the heat on! I've made this mistake before...). Stir occasionally and let cook for about 20 mins. 

  3. Add zucchini: Once rice is cooked, add in the grated zucchini and then cheese. Add salt and pepper to taste! Serve warm.
