Creamy Artichoke Bites

Artichoke crisps for all!
Here's some mush for the day: Ty and I have been dating for just around 5 1/2 years (insert ~awwws~ here), and over the course of that time I've also had the privilege of getting to know and love the rest of his family-- BB, Will, Neil, Amy, Kathy, Perry, Weedie, Grandy (everyone else in your humongus family) shout out! Many of the Atha's are fabulous chefs, and I've been lucky enough to taste tons awesome recipes through either Mrs. Atha or Britt's making... and SOME I've even been able to get my hands on!!! (life's mission is to get ALL, dun dun dun) Of those I've snagged, these artichoke hearts are one of my favorite easy recipes with literally two steps. Two stinkin' steps! It will take you longer to eat them than to make them, which actually isn't long at all seeing as how scrumptious they are. Try these for a quick and easy appetizer tonight!

Creamy Artichoke Bites

Prep Time: <5 mins | Cook Time: 15 mins | Makes roughly 24 crackers

adapted from Mrs. Kathy Atha's recipe book

Ingredients
  • 24 thin, crisp crackers (I love the 34 Degrees Crispbread crackers)
  • 1 can artichoke hearts, quartered and unmarinated (in water, not oil)
  • 2/3 cup 2% or whole milk Greek Yogurt (you can use mayo as well, same amount)
  • 1/2 cup Parmesan cheese, grated or shredded
  • 2 tbs. Worcestershire
  • 1 tbs. Sherry vinegar
  • 10 shakes of Tabasco (more or less to taste)
  • 1 tsp. garlic powder (or 1/2 tsp. of garlic salt)
  • 1/2 tsp. salt
  • 1/2 tsp. lemon pepper
  • parsley for serving
The Steps
  1. Prep work: Set your oven to 450 degrees... hot hot hot! Rinse your artichoke quarters under water and lay on paper towel to dry.

  2. Mix ingredients: In a bowl, combine all ingredients except arti hearts and crackers, and season to taste.

  3. Pile on crackers: Place crackers on baking sheet sprayed with Pam or lined with tin foil. Place an arti heart quarter on each cracker. Spoon creamy mixture on top of artichoke heart as pictured, about 1 tbs. or less. Place in oven and let bake for about 10 minutes or until bites are bubbling and cheese has melted. Let cool before serving.
