Quinoa "Fried" Rice

Yes, that IS Sriracha all over my not-so-fried but yes indeed awesome rice.
And no, that ISN'T actually rice-- it's quinoa. Don't le freak- let me explain...

So I was perusin' the Pin (at home?) and I kept seeing quinoa after quinoa (pronounced "keyñ-wah," I know super weird) recipe and I was all like, what the what is this stuff? Is it like couscous? Is it like rice pilaf? Is it like risotto? (one could only hope). So I did a little google-age and come to find out, this stuff is actually pretty cool for those gluten-free geeks out there, and can replace rice in almost every recipe I've come across. It is pretty flavorless, so you add your touch to make it sweet or savory-- or so totally spicy that your eyes well up like the last time you had "allergies" during a Hallmark commercial. This recipe is great for lightening up your fried rice and sneaking in veggies to your grains. You can swap out any veggies you like as well!

Quinoa "Fried" Rice

Prep Time: 5 mins | Cook Time: 25 mins | Serves 4

  • 1 cup dry quinoa (equals 3 cups cooked)
  • 2 cups chicken broth (or water)
  • 2 zucchini, diced
  • 1 head broccoli, chopped
  • 1 cup mushrooms, pre-sliced
  • 1 onion, diced
  • Sriracha as needed
  • salt + pepper
The Steps
  1. Prep quinoa: First things first, you must rinse your quinoa. Place the measured out quinoa in a fine mesh strainer/colander and rinse for a minute under running water.

  2. Pre-cook quinoa: In a small saucepan, place drained quinoa and 2 cups chicken broth. Bring mix to a boil, then reduce to lowest setting. Cover and let cook for about 15 minutes. If broth looks absorbed, remove from heat and let stand 5 minutes. Fluff with a fork (like couscous).

  3. Sauté veggies: In a sauté pan, heat up 1 tbs. olive oil over medium heat. Toss in onion and let cook for 5 minutes. Then add broccoli, mushrooms and zucchini (these all cook very fast, so don't let them cook for too long or they'll get mushy). Add in your finished, cooked quinoa and season with salt and pepper. Top with as much Sriracha you'd like + enjoy!
