Spicy Roasted Edamame... more like spicy roasted eda-nom nom nom-me!
This dish is so a) easy and b) like, so good. If I do say so myself. And I do. Grab a pack of frozen edamame, toss it with some spices, roast it, eat it. It really is that simple. When you do the little teeth drags to get the beans out of their pods, you'll get all the flavor of these spicy little treats. These are great for a quick and easy app or just to gnaw on as a snack! They taste great warm or cool so pack some in your lunch pak and enjoy at work (while Pinteresting/FBooking/G-chatting/Spotifying/Blogging like me/doing all these things at one time.. what??). Maybe just do as I say, not as I do.

Spicy Roasted Edamame

Prep Time: < 5 mins | Cook Time: 15 mins | Serves 4

Ingredients
  • 1 pack (about 3 cups) frozen edamame, whole pods
  • 1 tbs. olive oil
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. garlic salt (or 1 tsp. garlic powder, 1/2 tsp. salt)
  • 1 tsp. red pepper flakes
  • fresh pepper
The Steps
  1. Prep oven: Preheat your oven to 400 degrees. Line a cooking sheet with tin foil and set aside.

  2. Combine edamame + spices: In a mixing bowl, combine all ingredients & make sure all the pods are well coated with spices.

  3. Roast edamame: Spread beans out on sheet making a single layer. Roast for 10-15 minutes (depending on how soft you like your edamame- the longer, the softer). Let cool slightly and enjoy!
