Turkey Burgers with Brie, Avocado + Arugula

HAPPY (totally unofficial but you're okay to wear white pants now so it's basically) SPRING!
Yesterday was gorg city so I was desperate to make a springy-summery-happy-sunny meal while the weather lasted (one day, thanks weather) but whatever. It was a glorious 14 hours. Warm weather always reminds me of two things: the aforementioned white pants, and burgers. And guac. And "light salads." I know those things have no relevance to one another... or do they? Could you have the wonders of a juicy, delicious, dripping with flavor, hot off the grill burger while still satisfying the urge to eat healthy? Do you love slash hate burgers because of everything great yet HEAVY about them? Do I sound like the intro to an infomercial? Yes, there's an answer to your worries!

It's all possible with the Brie, Avocado and Arugula (turkey) burgers in the pretty pic above! I kid you not, I really think Ty likes turkey burgers more than beef burgers now. They are so flavorful (forget dry and bland) but you walk away happy and full, versus omgwtfdidieat syndrome. Hate that. Love these. Try them and join the turkey clan!

Turkey Burgers with Brie, Avocado + Arugula

Prep Time: 5 mins | Cook Time: 8 mins (grill) + 5 mins (oven) | Serves 4

  • 1 lb. ground turkey meat
  • 4 tbs. ketchup (see note)
  • 1/2 cup panko bread crumbs
  • 1 tbs. soy sauce
  • 1 tbs. Worcestershire sauce
  • 1/2 yellow onion, diced finely
  • 1 garlic clove, minced
to serve
  • 1 avocado, sliced
  • 4 small handfuls of baby arugula
  • 8 thin slices of brie
  • 4 wheat burger buns (small-sized)
The Steps
  1. Prep patties: Start by preheating your oven to 375 degrees. In a bowl, combine all burger ingredients minus the meat and season with salt and pepper. Add in chunks of the turkey meat and using hands, fold in the flavors to the ground meat.

  2. Cover a cookie sheet with tin foil and spray with cooking spray. Separate your combined turkey meat into four sections, and using your hands, form a patty. I like to start by rolling it into a ball in the palm of my hands, then patting down the top and sides to make an even shape. Place on cookie sheet and finish with the three other patties.

  3. Grill burgers: On a grill pan (if you have- just makes pretty grill marks but you can use a medium sized skillet as well), pour 1 teaspoon of olive oil and heat the pan on medium heat. Once pan is hot, spray cooking spray quickly and then place two patties on the grill pan at a time. Cook for 4 minutes each side, then set back onto the cookie sheet. Grill the remaining patties.

  4. Finish cooking in oven: Once all four have been grilled, place cookie sheet in your preheated oven. While patties cook for 5 minutes exactly, turn the heat down on your grill pan and grill the inside of your burger buns. After 5 minutes, remove burgers and add your slices of brie to each patty. Place back in oven for 2 minutes and then remove. Top with avocado and arugula!
